This Steak Greek Salad has quickly become my favorite salad! The flavors of the tart but zesty dressing is a perfect pair for the easy mixed greens, red onion, feta cheese and olives. Then you must top it off with a perfectly grilled steak! We love to use the Flat Iron because it is the second most tender cut behind the filet and it is super budget friendly!

A sirloin would be great cut to go with this Greek salad as it is in the top 29 lean beef cuts. We love to use our Pacheco Beef Sirloins.

The flat iron is cut from the chuck.

What is the best way to cook a flat iron steak?

I love this cut because I can quickly cook it in a cast iron skillet. I also feel that this cut is best when cooked to medium rare.

The Steak Greek Salad

Dressing (I usually eyeball these ingredients, but here is the recipe that I found from Taste of Home that I use for reference)

½ cup Olive Oil
¼ cup red wine vinegar
2 tablespoons lemon juice
2 garlic cloves, minced
1 teaspoon Grainy Dijon Mustard
½ teaspoon salt
¼ teaspoon pepper
½ teaspoon dried oregano (I also use fresh when I have it)

In a jar with a tight-fitting lid, combine all ingredients; shake well.

Salad
Mixed Greens
Red onion
Feta Cheese
Olives

Place mixed greens in bowl and toss with dressing. Then add the red onion feta cheese and Olives.

Steak
Pacheco Beef Grill Seasoning
Pacheco Beef Flat Iron

Season steak with grill seasoning. Add to a preheated cast iron skillet. Cook for 3-5 minutes and then flip and cook for additional 3-5 minutes.  Let rest for an additional 5 minutes, then once the steak has rested slice.

Add the dressed salad to a plate top with the sliced steak. We also love a good NAAN bread to go with this salad!

Highline School District Gets First Latino Superintendent | South Seattle Emerald

The Highline School District kicks off its academic year with a new superintendent, Ivan Duran — the first Latino ever to hold the position. 

The district, which serves Burien, Des Moines, SeaTac, Normandy Park, and neighborhoods in White Center, has had a majority Latino student body since at least 2015. Duran replaces Susan Enfield, who had the position for a decade. According to data from the Washington Office of Superintendent of Public Instruction, Highline School District Latino students make up nearly 40% of the more than 18,000 enrolled students as of the last academic school year. Statewide, Latino students only make up 25% percent of enrollment.

Before Duran took the position earlier this summer, he had a brief one-year stint at the Renton School District, where he helped direct and prioritize federal funds as the chief of acceleration and recovery. He was also the superintendent for the Bellevue School District from 2017 to 2021. At Bellevue, he took an interest in the disparity of achievement between its low-income students who come from underrepresented communities compared with its Asian and white student population.

“I was able to lead the [Bellevue School] District for four years,” he says, “[but] was really looking forward to serving a more diverse community that is more similar to the experience that I grew up in.”

Duran, who is Mexican American, says he struggled as a young student. His school experience also includes anti-Mexican harassment when he was bussed from his neighborhood to his white suburban middle school. 

Prior to arriving at Highline School District, he also worked in Denver and Dallas, two areas where Latinos and Students of Color also make up large majorities. He says Highline is closer to looking like the communities he has experience in, but is quick to add that no Latino community is a monolith, with students coming from all over Latin America and some speaking an Indigenous language as their first language before Spanish. Both Duran’s parents spoke Spanish at home.

“[In] Washington, Latino families are spread out in different areas. It’s different here on the west side compared to the east side,” he says, adding, “I think this is more true now in our times that Latino communities are made up of individuals like me whose families have been here for generations to newly arrived immigrant families who are here to try to seek the best experiences for their students.”

Virginia Herrera-Páramo, executive director of Para Los Niños, a South King County nonprofit that provides educational programs for Latino and Spanish-speaking students and that has partnered with Highline School District, says she was pleased to learn Duran spoke Spanish. She participated in finalist interviews and organization meetings. 

“So many organizations talk a lot about what needs to take place and say, ‘We need to hire more people from the community,’ but they don’t do it, but in this case, it serves as a good role model,” Herrera-Páramo says. 

Still, she’s curious what the new superintendent’s plan for the budget will look like, given Highline is much different in that regard compared with Bellevue School District. Highline spends about $17,600 per student, whereas Bellevue spends around $19,700. Meanwhile 71% of Highline students are considered low-income, compared with only 19% of students at Bellevue. 

“I think he knows how to make money,” she says. “I think he will do a good job. The problem is how he will prioritize the needs, especially in a community that hasn’t been well served, the BIPOC community … and, of course, the Latinx community.”

Herrera-Páramo believes all the Latinos in the region, whether students or parents, have something to gain from seeing someone they identify with in a leadership position.

So far, Duran says he is focused on getting to know the district community, but is starting to review the budget from last year and consider what they can invest in this year. “We received a big source of funding from the federal government through the American Rescue Act,” he says. 

Earlier this summer, at a barbecue for building and facilities employees, Duran had the chance to meet some of the workers. Duran says one of them came up and struck up a conversation in Spanish.

“She was just so happy and I think really proud,” Duran recalls. “I hope that is how all of our Latino families and students will feel, just proud that there’s a Latino leader who is here to support them and all of our students.”

Kayla Harrison Pleads for Elbows to be Allowed in PFL Finals

Following her emphatic win on Saturday nightKayla Harrison emplored the PFL to allow elbows. Talking to the media, Harrison discussed her trilogy fight with Larissa Pacheco stating:

“I want the PFL to allow elbows. I think that everyone should get on Twitter and say to the PFL ‘Bring back the elbow’ and let’s make this a real MMA fight and see what happens when it’s really the rules and she has no way to survive on the ground like she did last time”

To Elbow or Not to Elbow, that is the Question

It makes a lot of sense for the PFL not to allow elbows during the regular season or during the semi-finals. As we know, elbows can do some serious damage when landed correctly and nobody wants fights delayed due to injuries. The schedule is certainly an aspect that makes the PFL so exciting. Take Harrison, for example. She competed in May, July and August and is set to compete in the finals in November. That relentless schedule would certainly be affected if she suffered a deep cut.

Harrison is also a great example of the devastation that elbows can bring to the cage. During her one and only fight outside the PFL (due to a contract exemption), she faced Courtney King in Invicta FC (who allow elbows in their fights). Harrison truly brutalised King. The first elbow she threw split her opponent open and it was a blood bath from there on out.

Former PFL commentator, Yves Edwards discussed the matter back in 2018 when talking to MMAJunkie. “We just want to eliminate as many things as possible to keep the guys that are earning their shot, to keep them having the opportunity to earn that one million dollars,” Edwards said.

With that being said, it would make sense for fighters to be able to use their full repertoire of attacks in the finals. The fighters don’t have to fight a matter of months later, in this case, they can have months off after their final bout. If they do suffer a cut due to elbows, it won’t affect their season (as it is classed as ‘off-season’).

There’s little logical reason for the PFL not to allow elbows in the final. They, like all MMA promotions, don’t like fights being stalled and as Harrison suggested, in their previous bouts, Pacheco ‘survived’ on the ground. If elbows are allowed on the ground, simply ‘surviving’ on the ground becomes a lot riskier. It also doesn’t limit a fighters game and would definitely provide better fights.

Will elbows be allowed in the PFL finals in November? Only time will tell, but let’s hope so.

Patt Young Appointed by Contra Costa Water District

Concord – On Wednesday, June 15, the Contra Costa Water District’s (CCWD) Board of Directors (Board) unanimously appointed Patt Young to fill a vacancy representing Division 1.

In April 2022, the Division 1 seat for CCWD became vacant following the resignation of former Board President, Lisa M. Borba. Division 1 includes the cities and communities of Bay Point and Clyde as well as portions of Concord, Pacheco and Pittsburg.

Four community leaders applied to represent Division 1 and were interviewed during a special June 1 CCWD Board meeting. On June 15, the Board reconvened at their regular meeting to have a public discussion of their recommendation and unanimously chose Patt Young, a Pittsburg resident, for the position.

“The Board was faced with a tough decision between four applicants that brought strong qualifications to represent CCWD customers,” said Board President Ernesto A. Avila. “After completing our own evaluations independently, we had a public discussion at the Board meeting and we all noted Ms. Young’s candor, public service experience and community involvement, which led to a unanimous vote for her appointment.”

Ms. Young is an active member of the community working in leadership roles on the First Baptist Head Start Board of Directors, City of Pittsburg Community Advisory Commission and the Los Medanos Community Healthcare District Board of Directors. She has an extensive background in public health with a focus on education and outreach within under-resourced communities.

Following the Board’s decision, Ms. Young shared, “I am honored to join the CCWD Board representing the communities in Division 1. I support efforts to expand local knowledge of water issues, and I want to help effectively communicate information about this precious and valuable resource. As a woman of color with years of public service experience, I will add to the diversity and efficacy of governance over local policy decisions on water issues.”

Ms. Young’s appointment is historic as she is the first African American to represent the community on CCWD’s Board of Directors. She will complete the oath of office before taking her seat at the next Board meeting on Wednesday, July 6, 2022.
