Recipe: Italian American Vegetable Soup for the Soul

It’s bitterly cold in many parts of the country, and summer seems (and is) a distant mirage. The countdown is on to spring, and while the calendar tells us that we’re only a few months away, January and February are brutally cold months that will feel like they’re stretching on to eternity. And if you’re in the Northeast, like me, March may be the meteorologic start of spring, but Mother Nature usually doesn’t comply.

The only thing positive about winter (in my opinion), is the abundance of soups we get to enjoy. I have soup almost daily in the winter and the warmth they provide are not only for the body, but also the soul. Nothing like sitting down to a steaming bowl or mug full of soup, inhaling the broth and taking it all in.

This soup uses traditional ingredients found in a Tuscan soup, but I don’t dare call it that, as it is not a ribollita. It is not twice cooked, meaning you will be enjoying it that much faster. I love the peasant ingredients used, making this an inexpensive first course that can serve a family on just a few dollars. The addition of potatoes adds thickness, and the addition of cannellini beans add protein, and those leafy greens offer a wealth of nutrients. It’s medicine in a bowl.

Italian Vegetable Soup

Serves 4 – 6

Ingredients

2 medium bunches of Swiss chard, chopped and washed thoroughly

2 15-oz cans cannellini beans, rinsed and drained

2 large carrots, diced/sliced

1 small onion, diced

2 ripe tomatoes, quartered (or 3 tablespoons canned crushed tomatoes)

2 tablespoons chopped parsley

Salt & ground black pepper, to taste

1 large vegetarian or chicken bouillon cube (or 8 cups chicken broth)

1 Parmesan rind (Optional)

2 – 3 large potatoes, cut in large chunks

Instructions

  1. Roughly chop the Swiss chard to about 2-inch pieces. Wash it thoroughly and set it aside. Drain and rinse the cannellini beans and set those aside.
  2. In a large soup pan, add the carrots, onion, tomatoes and parsley, and fill the pot ¾ of the way up with water (or stock). Season with salt and pepper, add in the bouillon cube (skip if using stock), and bring everything to a full boil. Add a parmesan rind, if you have one on hand.
  3. When the broth is boiling, add in the potatoes and cook for 10 minutes. Stirring occasionally. Add in the chopped Swiss chard and pack it down with a wooden spoon, cook for 10 minutes. Add the cannellini beans, stir well and cook for another 6 – 10 minutes, until beans are soft and tender. Potatoes may break down a bit.
  4. Taste for seasonings, adding salt and pepper as needed, and serve with crusty bread for dunking.

Variations: Using the same steps, you can substitute chickpeas or red beans for the cannellini, and escarole, spinach or kale for the Swiss chard.

Pomegranate: Evidence-Based Benefits of This Antioxidant Superstar

Pomegranate, with its characteristic red arils, is small but mighty when it comes to substantial benefits to your health as a superfood

Pomegranate has been called an antioxidant superstar. In fact, researchers have confirmed that pomegranate has three times the antioxidant power of red wine and green tea.[i] The antioxidant impact in pomegranate comes from compounds known as polyphenols. Pomegranate includes flavonoids (catechin and anthocyanins), condensed tannins, phenolic acids, hydrolysable tannins (punicalagin), alkaloids and lignans.

From lab studies of pomegranate compounds, scientists have verified that pomegranate has beneficial antioxidant, antidiabetic, antiobesity, anti-hypertensive and anti-inflammatory properties.[ii],[iii] Isn’t it time to add pomegranate to your healthy routine?

Six Therapeutic Qualities of Pomegranate

1. Lowers Oxidative Stress

Oxidative stress refers to the imbalance between the production of reactive oxygen species (free radicals) and antioxidant defenses.[iv] This imbalance is caused by environmental stressors (i.e., ultraviolet light, exposure to radiation, pollutants, pesticides, industrial chemicals, smoking, ozone and heavy metals) and internal factors (nutrition, inflammation, lifestyle, conditions like dementia, cancer, diabetes and chronic illnesses).[v]

Accumulation of the reactive oxygen species (ROS) and oxidative damage has been linked to multiple pathologies, including neurodegenerative diseases, metabolic disorders, atherosclerosis, cardiovascular diseases,[vi] diabetes, cancer, recovery from overexercise/injuries, skin diseases and premature aging.[vii]

Pomegranate’s antioxidant superpower decreases oxidative stress, which helps to prevent and improve these oxidative related diseases and subsequent symptoms.

2. Prevents Lifestyle Diseases and Lowers Complications

Lifestyle diseases are ailments that are primarily based on the day-to-day habits of people (such as being sedentary, smoking, unhealthy diet and alcohol abuse) and include diabetes, cardiovascular diseases, chronic respiratory illnesses, stroke and cancer. Precursors can be high blood pressure, high blood sugar levels, high levels of fat in the blood, high levels of stress and obesity.[viii]

The antioxidant protection of pomegranate polyphenols helps prevent lifestyle related diseases by reducing ROS and increasing antioxidant activity.[ix] A meta-analysis of eight studies regarding pomegranate juice consumption and high blood pressure showed significant reductions in both systolic and diastolic blood pressure after taking pomegranate juice; researchers recommend including this fruit juice in your heart-healthy diet.[x]

Pomegranate was a potent antioxidant in diabetes-induced oxidative stress and fibrosis in a study of rats and partially ameliorated erectile dysfunction, a symptom caused by diabetes.[xi]

Consumption of concentrated pomegranate juice (50 grams per day) had favorable effects on two markers of inflammation (high-density lipoprotein cholesterol and IL6) and increased total antioxidant capacity by approximately 75% in a clinical study of 40 patients with Type 2 diabetes.[xii]

3. Reduces Cancer

Researchers found that pomegranate peel extract inhibited growth of prostate cancer cells, particularly in migration and invasion, which are two critical steps in prostate cancer metastasis.[xiii] In a study of hamsters, pomegranate peel extract exhibited significant antioxidant activity in their lung fibroblasts by reducing ROS by 29% to 36%.

In human breast and colon cancer cells, pomegranate extract decreased cancer cell growth both in drug-sensitive cells by 15% to 30% and in drug resistant (doxorubicin-resistant) cells by 5% to 20%, suggesting the potential usefulness of pomegranate extract in people exposed to oxidative stress and as a therapy for human cancers.[xiv]

Compared to juice, the total phenolic content and free radical scavenging potential was significantly higher in the pomegranate extract enhanced in a lab compared to its two fractions (anthocyanins and copigments) and showed the highest radical scavenging activity against galvinoxyl and DPPH radicals, oxidative stress markers in human liver cancer.

Results indicated that anthocyanins and copigments act together synergistically in reducing oxidative stress.[xv] Pomegranate was shown to improve oxidative stress levels in a jaundice-induced animal model.[xvi] Jaundice can be caused by hepatitis, gallstones, gallbladder cancer and pancreatic tumors.[xvii]

Preliminary studies show that pomegranate supplementation could prevent breast cancer by reducing two sex hormones related to breast cancer risk in a study of 64 healthy postmenopausal women who were randomly assigned to drink eight ounces of either 100% commercial pomegranate juice (intervention) or apple juice (control) for three weeks; the intervention group showed significant declines in both estrone and testosterone levels.[xviii]

A pomegranate emulsion containing various bioactive phytochemicals was found to exert substantial chemopreventive effect against induced mammary tumors in rats via antiproliferative and proapoptotic actions, which disrupted the estrogen hormone, signaling a possible breast cancer treatment for humans.[xix]

An oral capsule containing a blend of pomegranate, green tea, broccoli and turmeric, or an identical placebo, for six months was compared in 199 men with localized prostate cancer; the polyphenol food supplement group had 63% lower prostate-specific antigen (PSA) levels, a marker of progression of prostate cancer, compared to the control group.[xx]

In their comprehensive review of clinical trial studies, researchers confirmed that pomegranate plays a vital role in prevention and treatment of breast, prostate, lung, colon, skin and liver cancers.[xxi]

4. Boosts Recovery and Faster Healing of Injuries After Exercise

Consumption of pomegranate juice over three weeks improved two oxidative stress markers and thus decreased the oxidative damage caused by exercise in a study of 30 high-endurance athletes.[xxii]

Supplementation — 50 milliliters daily for two months — of pomegranate juice in a study of 19 Polish athletes found a significant strengthening of plasma antioxidant potential in the supplementing group measured by the increase of total antioxidant capacity and IL-6 levels.[xxiii]

Watermelon juice enriched with pomegranate and citrulline showed no increase in muscle damage and a significant maintenance of force during exercise and a significant decrease in the rating of perceived exertion and muscle soreness after exercise in 19 healthy men.[xxiv]

In a mice study, pomegranate red peel extract showed high antioxidant activity that significantly enhanced serum biochemical parameters and reduced oxidative stress; scientists recommended pomegranate for a daily animal diet or as a beverage for humans to gain antioxidant protective effects and improve health.[xxv]

Endurance running places substantial physiological strain on the body, which can develop into chronic inflammation and overuse injuries, but supplementation with pomegranate, curcumin and methlysulfonylmethane (MSM) reduced systemic inflammation and oxidative stress without adverse side effects in 15 marathon runners.[xxvi]

5. Improves Skin and Premature Aging

In a review of current studies, researchers found that phenolic compounds in pomegranate may have a protective effect on skin exposed to high levels of air pollution. That effect includes increasing antioxidant activity by reducing harmful ROS related to oxidative stress and lowering inflammatory markers such as cytokines and chemokines in skin diseases and decreased premature skin aging caused by particles in the air.[xxvii]

In addition, pomegranate was shown to be beneficial for reducing harmful effects of solar UVB radiation on animal skin[xxviii],[xxix] and ultraviolet (UVA and UVB) radiation on human skin.[xxx] Daily oral pomegranate consumption (eight ounces of pomegranate juice or 1,000 milligrams of pomegranate extract) enhanced protection from UV photo damage in a study of 74 women.[xxxi]

6. Decreases Inflammation

In a meta-analysis of 16 randomized controlled trials involving 572 subjects, pomegranate supplementation significantly reduced inflammation biomarkers of hs-CRP, IL-6 and TNF-α compared to the placebo group.[xxxii]

High-sensitivity C-reactive protein (hs-CRP) indicates your risk of developing coronary artery disease (narrowing of the heart’s arteries) and inflammation in your body. Coronary artery disease can lead to a heart attack.[xxxiii] Interleukin-6 (IL-6) is a protein that helps regulate immune responses and is used as a marker of immune system activation. IL-6 levels can be elevated with inflammation, infection, autoimmune disorders, cardiovascular diseases and some cancers.[xxxiv]

Tumor necrosis factor alpha (TNF- α) is a protein that contributes to inflammation as well. In healthy people, it is an essential part of the immune system, helping the body mount attacks against invading bacteria and viruses and heal damaged tissues; in those having autoimmune diseases such as arthritis, excess levels of TNF- α in the blood can lead to unnecessary inflammation and chronic pain.[xxxv]

Brain inflammation is one of the leading factors in neurological disorders like dementia, including Alzheimer’s disease. Scientists found evidence that pomegranate peel extract provides preventive and progressive benefits in neural diseases by positively affecting spatial memory and decreasing biomarkers of neuroplasticity, oxidative stress and inflammation in a mouse model of neurodegeneration.[xxxvi]

In a placebo-controlled study of 261 non-demented individuals from 50 to 75 years old, daily consumption of pomegranate juice (230 milliliters) stabilized the treated group’s ability to learn visual information over a year.[xxxvii]

A study of rats with aluminum chloride induced neurotoxicity showed that pomegranate peel extract could inhibit aluminum-induced oxidative stress and pathologies in the brain, possibly related to its anti-apoptotic and antioxidant abilities.[xxxviii]

Nautilus now has its new captain. Deadline reports that the forthcoming Disney+ series has cast British actor Shazad Latif in the starring role of Captain Nemo. Latif is probably best known for portraying starship crewmember Ash Tyler in Star Trek: Discovery. He also played Dr. Jekyll in the third season of Penny Dreadful.

As we reported back in August, Nautilus will be a re-imagining of Jules Verne’s Twenty Thousand Leagues Under the Sea, telling the origin story of Nemo and his submarine.

Deadline also reported that Michael Matthews will direct the series. His credits include the 2020 film Love and Monsters.

One aspect of the Deadline report has raised hackles among Verne aficionados. In the original story, Nemo designed and built the Nautilus, but according to Deadline, the Nemo of the Disney+ series “steals a fantastical submarine from the East India Company and sets sail in search of adventure under the sea.”

So far, Latif is the only cast member listed on the series’ IMDb page. Screen Queensland announced in August that filming would begin early next year at Village Roadshow Studios and surrounding locations in Australia’s Gold Coast region. Deadline reported that production begins next month.

Steampunk fans know Phil Foglio as half of the creative team behind the popular Girl Genius webcomics. But now he’s out with something completely different: A comedic all-prose fantasy novel entitled The Night Sheriff.

The title character is protector of Zenonland, a Southern California fantasy theme park that bears some resemblance to a tourist attraction associated with a cartoon mouse. “Now an attack on the park by a monster hunter, who knows far too much, threatens everything: guests, staff, and fellow supernaturals taking refuge in the park,” we’re told. “The Night Sheriff must scramble to uncover not only the source of the threat, but secrets of the park of which even he was not aware.”

The Night Sheriff is available in e-book and paperback formats from Amazon.

You’ve likely seen photos of the Neverwas Haul cruising the playa at Burning Man, or perhaps in the vehicle yard at the Obtainium Works studio in Vallejo, California. But if you haven’t seen the interior, Obtainium Works crewmembers Katherine the Great and Dr. Prof. Samuel Tweed recently hosted a video tour from the Haul’s temporary home on Vallejo’s Mare Island.

The Haul will be there through Dec. 2, after which it will move again and become part of the festivities at the Mad Hatter Festival and Parade, Saturday, Dec. 4 in downtown Vallejo.

Cyan Eyed, the short animated steampunk adventure from Nezui Films, took the top award in the 3D category in the Animation Studio Festival competition. As we previously reported, the film was written, produced, and directed over seven years by entertainment industry vet Ryan Grobins.

The movie follows a sentient automaton named Grunt who boards a pirate airship to rescue a girl with supernatural powers. But first the robot must contend with pirate captain Corliss “The Red Snake” Vail.

The Animation Studio Festival award was one of many won by the film over the past year. You can view the eight-minute film in its entirety on the Cyan Eyed website.

T.E. Yates, the multi-talented artist and musician from Bristol, UK, has been busy lately with a new EP and music video. The six-track EP, Strange Weather, begins with “Condition,” described as “a reliably forthright and honest song about his experiences as a neurodivergent person.”

The song inspired a music video created in collaboration with other neurodivergent artists in the Bristol area.

Yates himself created the album’s cover art, which was inspired by Art Nouveau, particularly the Four Seasons works by Czech artist Alphonse Mucha.

Readers may recall Yates’ 2020 animated music video, “Farewell Rainy City,” which depicts him aboard two historic vehicles, The Liverpool and Manchester Railway and John Greenwood’s omnibus.

An earlier animated music video, “Evil Cat,” was recently an official selection at the Poe Film Festival in Richmond, Virginia. It’s based on Edgar Allan Poe’s 1843 story “The Black Cat.”

The National Space Centre in Leicester, UK will once again host Steampunks in Space, billed as a “celebration of steam-powered science fiction.” This year’s event, scheduled for Nov. 20-21, will also serve as a tribute to the 155th birthday of H.G. Wells. Activities include an art exhibition, tea dueling, a steampunk market, craft workshops, and live entertainment.

The daytime entertainment lineup includes Victor Ghastly on Saturday and Alice Strange on Sunday. Saturday’s event is sold out but limited bookings are still available for Sunday.

The museum will also host the “War of the Worlds” dinner on Saturday night, but that, too, is sold out. The entertainment lineup features Count Rostov, Alice Strange, Thomas B Wild Esq., and Victor and the Bully.

The Great Dickens Christmas Fair has become a holiday tradition in the San Francisco area, bringing a taste of 19th century London to the Cow Palace in Daly City. The 2020 event was cancelled due to COVID-19, and with the emergence of the Delta variant, the organizers announced in August that this year’s festival would also go dark. But now they’ve decided to bring it back as the “Drive-Thru Dickens’ London,” which you can experience from your car.

They’ll be converting the Cow Palace parking lots into an outdoor version of the festival, complete with entertainment, food, and a limited number of vendors offering holiday shopping. Attendees will also be able to tune their FM radios for audio entertainment.

It’s happening for three weekends, Saturdays and Sundays, from Dec. 4 through Dec. 19. Tickets cost $25 per vehicle and must be purchased in advance.

As with last year, the organizers will also host Dickens Fair at Home, a series of online festivities that also kicks off on Dec. 4.

Oddball Newt announced dates for the next Stupid Cupid Steampunk Ball, which is happening Feb. 26 and 27 at Cheney Hall in Manchester, Connecticut. The event will feature performances by Victor and the Bully, Frenchy and the Punk, and The Eternal Frontier, along with fashion shows, teapot racing, tea drinking and steampunk vendors. 13 Gears, the “Eclectic Steampunk Event,” will make its long-awaited return to Minneapolis on Sunday, March 6, 2022. This time it will be a free public gathering at two adjacent venues, La Dona Cerveceria and Royal Foundry Craft Spirits at 241 Fremont Avenue N., Minneapolis, MN 55405. Video game programmer Jesus Manuel Pacheco Lopez of Malaga, Spain launched a Kickstarter campaign for Blue Night, described as an “action RPG” set on a drought-stricken planet in the far future.

One steampunk-styled city has been saved thanks to cloud-generating machines, but now “it rains day and night, the probability of getting sick is high, food is scarce, and the economy does not advance,” the creator writes. “People are fed up with this and many have risen up against it by forming a rebellion.”

Players take the role of Chika, a super-powered soldier who aims “to save humanity from those who seek to destroy the rain that saves all.”

Lopez plans to release the game on the Steam platform next March. It will be available in English and Spanish. The Kickstarter page includes links to a downloadable demo version.

The campaign launched Nov. 15 and seeks €7000 (US$7908) by Dec. 25. As of Wednesday afternoon, it had just four backers. See the Kickstarter page for more info.

Update: The Victorian Collection costume book from Laura Meyer is more than halfway toward its US$9500 goal with about two weeks to go. Rewards include the book itself (in PDF or hardcover) as well as some of the creator’s handmade costumes.

Valley Water extends comment period for Pacheco Reservoir Expansion Project Draft Environmental Impact Report – Valley Water News

Despite a very wet December, Santa Clara County and much of California remain in a drought emergency. January rainfall was minimal. We don’t know when this drought will end, or when the next one will arrive.

That’s why Valley Water is exploring options to increase the amount of water it can store in local reservoirs.

One of these projects, the proposed expansion of Pacheco Reservoir in south Santa Clara County, would double the amount of water we can store in local reservoirs. Valley Water would rely on this local supply during future droughts and emergencies.

On Nov. 17, 2021, Valley Water released a Draft Environmental Impact Report (EIR) on the Pacheco Reservoir Expansion Project for public review.  Members of the public and other stakeholders have until Tuesday, Feb. 15, 2022, at 5 p.m. to provide written comments. Initially, Valley Water scheduled the comment period to end in mid-January, but the deadline was extended to give stakeholders more time to review the document and provide written comments.

The proposed expansion of Pacheco Reservoir in southern Santa Clara County is a partnership with the Pacheco Pass Water District and the San Benito County Water District. It would increase the reservoir’s capacity from 5,500 acre-feet to up to 140,000 acre-feet, enough water to supply up to 1.4 million residents for one year during an emergency.

The proposed project would also provide environmental benefits to the federally threatened South-Central California Coast Steelhead trout through habitat enhancement in and along Pacheco Creek.

Valley Water hosted a virtual public meeting on Jan. 13, 2022, where a detailed Draft EIR presentation was provided, along with a questions and answers session.
