By Brian Webber: Callum Smith will be headlining next month against unbeaten light heavyweight fringe contender Pawel Stepien in a 12 round fight on DAZN in a Matchroom Boxing promoted card on March 11th at the Echo Arena in Liverpool, England.
The 32-year-old former WBA super middleweight champion Smith (29-1, 21 KOs) must come through this fight victorious to challenge IBF, WBC & WBO light heavyweight champion Artur Beterbiev in the summer.
Poland’s Stepien (18-0-1, 12 KOs) is ranked #7 IBF, #13 WBA & #15 WBO at 175. Regarding name opponents on the 32-year-old Stepien’s eight-year resume, these are the only notable names: Dmitry Sukhotskiy & Ezequiel Osvaldo Maderna.
For boxing fans that tuned in recently for the Artur Beterbiev vs. Anthony Yarde card on January 28th at the Wembley Arena in London, they saw Maderna stop the highly touted light heavyweight prospect Karol Itauma in the fifth round.
So for Stepien to have beaten Maderna by an eight round majority decision last year in March, that says a lot about his talent.
Callum just needs to make sure he doesn’t have any slip-ups against Stepien for him to stay in line for his title shot against Beterbiev in the summer.
Many boxing fans are grumbling about the choice of opponent for Callum, saying that this is another example of him being matched against an unknown fighter since he moved up to 175 in 2021.
For the record, Smith has fought twice since moving up to light heavyweight three years ago, beating the capable Lenin Castillo and Mathieu Bauderlique to speedily earn the WBC mandatory spot to get a title shot against IBF/WBC/WBO 175-lb champion Artur Beterbiev.
Whether fans feel that Smith hasn’t earned the title shot against Beterbiev doesn’t matter. What’s done is done. Smith is the WBC mandatory to Beterbiev, and he will get a title shot in the summer.
The only thing that you can say is that Callum’s preparation for the Beterbiev fight won’t be ideal, and he’ll be taking a massive step up in class when he gets inside the ring with the unbeaten champion.
You can’t blame Matchroom Boxing promoter Eddie Hearn for the WBC choosing to sanction the Smith vs. Bauderlique fight as a title eliminator.
Undercard:
The undercard for Smith vs. Stepien is packed, with Liam Paro fighting Robbie Davies Jr and Diego Pacheco facing Jack Cullen.
“This is a fantastic card in Liverpool. I can’t wait,” said Eddie Hearn to Matchroom Boxing. “Callum Smith, who is simply waiting now for Artur Beterbiev. “Obviously, a great win for him [Beterbiev against Anthony Yarde]. He’ll now take part in Ramadan, and we’ll be ready for the summer.
“The WBC allowing Callum Smith to have this fight against Pawel Stepien. Stepien is, I believe, number 14 in the world, 7 in the world, and 13 in the world. He’s world ranked in every governing body and very, very dangerous and unbeaten as well.
“For Callum Smith, it’s about getting out and looking good and coming out unscathed in that fight to prepare himself for a monster fight against Artur Beterbiev in the summer.

For the first time since the pandemic began the Helen Hayes Awards will be returning live for a 37th Awards gala at the Anthem May 22. On Jan. 30, the awarding organization – Theatre Washington – held an in-person, live-streamed celebration in the National Theater’s Helen Hayes Gallery announcing their 2023 nominees for Washington’s most prestigious theater awards, a “celebration honoring theatre excellence on stages across the Washington area.”
“It’s no secret that the theater industry has been through an unprecedented few years. I am enormously proud of the work that has emerged despite these challenges. The Helen Hayes Awards are one way to recognize and express gratitude to Washington, D.C.-area theater-makers who provide meaning to our community. To be back in person this year, to reflect on and celebrate the extraordinary work created on our stages, is moving,” said Theatre Washington President and CEO Amy Austin at the Jan. 30 National Theater nominations event.

The Helen Hayes Awards recognize “outstanding achievement from more than sixty professional theatres and hundreds of theatre-makers across the Washington, D.C. region each year,” according to Theatre Washington. “Named for Helen Hayes, the legendary ‘First Lady of the American Theatre’ born in Washington, D.C., the awards celebrate the artists and theatre companies whose work makes Washington a thriving, nationally recognized theatre community.”
Helen Hayes (1900-1993) was only the second person in history to become an EGOT – a lifetime winner of an Emmy, Grammy, Oscar and Tony Award. She was the first actress to win Academy Awards in both Best Actress and Best Supporting Actress categories. She was also dubbed “Radio’s Favorite Actress” for “The Helen Hayes Theater of the Air” and other shows in the 1930s. She received over fifty honorary degrees in her lifetime and published multiple best-selling books.

In 1983, the Helen Hayes Awards were established to “honor achievement and promote excellence in professional theatre in the city” where Hayes was born.
Theater Washington’s 2023 awards will recognize work from 131 eligible productions presented in the 2022 calendar year with nominations in 41 categories grouped in cohorts of “Helen” or “Hayes,” depending on the number of Equity [actors’ union] members involved in the production. Forty “carefully vetted” and “anti-bias” trained judges will consider 2,146 individual pieces of work, such as “design, direction, choreography, performances and more.” Productions to be judged will include “39 musicals, 97 plays and 38 world premiers.”
For 2023, Signature Theatre and GALA Hispanic Theatre saw the most theater nominations, with 30 and 20 respectively. According to DC Theatre Arts, “the most nominated productions include “ON YOUR FEET! La historia de Emilio y Gloria Estefan ¡EN ESPAÑOL!” at GALA Hispanic Theatre (with 15), “The Color Purple” at Signature Theatre (with 13), “John Proctor Is the Villain” at Studio Theatre (with 11), and “tick, tick…BOOM!” at Monumental Theatre Co (with 11).”
Outstanding Emerging Theatre Company (the John Aniello Award) will go to Ex-Pats Theatre and Prologue Theatre.
Broadway and television producer Bonnie Nelson Schwartz, the founder and original producer of the Helen Hayes Awards, will receive the 2023 Helen Hayes Tribute Award.
“Despite its short run on Broadway, Jordan E. Cooper’s critically acclaimed ‘Ain’t No Mo’’ received five nominations for its run at Woolly Mammoth Theatre Company, including Lili-Anne Brown for best director and actors Jon Hudon Odom and Brandi Porter for best lead and supporting performances, respectively,” Sarah Marloff of Washington City Paper reported.
“Falling into the Hayes category, Ain’t No Mo’ was also nominated for Outstanding Production in a Play alongside “John Proctor is the Villain,” Shakespeare Theatre Company’s “Much Ado About Nothing, “Round House Theatre’s Nollywood Dreams and The Tempest, and Olney Theatre Center’s “The Joy That Carries You,” Marloff continued.
“In the Helen vertical for outstanding play production are Synetic Theater’s “Host & Guest “and “The Servant of Two Masters”; Perisphere Theater’s “Blue Door,” Prologue Theatre’s “The Revolutionists,” and 1st Stage’s “The Rainmaker,” Marloff wrote.
“Likewise, GALA’s “ON YOUR FEET!” was nominated as the Helen vertical’s outstanding musical production along with Monumental’s “tick, tick…BOOM!,” Constellation Theatre Company’s “Once on This Island,” and two productions from Toby’s Dinner Theatre: “Monty Python’s Spamalot” and — yes — “The Spongebob Musical.”

Two years ago, junior high school student Serena Chao saw a young girl receive a prosthetic hand for the very first time. When she saw the little girl beaming from ear-to-ear in excitement, Chao knew she wanted to be a part of whatever was helping this child’s dreams come true.
Chao found out the prosthetics were made possible through an elective at her school, Sage Hill School in Newport Beach. The class, titled 3D Design, Modeling and Fabrication, allows students to print and design custom prosthetic hands for real-life recipients from all across the world.
When Chao was finally eligible to take the class her junior year, she was ecstatic to help brighten the lives of others in her community and elsewhere.
“I think (my favorite part is) just knowing that it’s making these little kids happy is so rewarding,” Chao said.
The Sage Prosthetics Service Learning Project, which partners with the non-profit e-NABLE to create assistive devices, began at the school in 2016. Science teacher for the course and Assistant Director for Service Learning and Outreach Tanya Lerch wanted students to not only create prosthetics through 3D printing, but to understand software and design their own projects – which is why she transformed the project into a year-long class.
The hard work is paying off, with four seniors in the class receiving the Youth Leadership for Service-Learning Excellence Award through the National Youth Leadership Council in January that gave a $1,000 grant to support the program.
“I just saw how rewarding it was, both for the recipients we worked with and for the students in our class who got to problem solve, work with their hands, have fun with it, learn new skills (and) learn new technologies,” Lerch said. “That became something that I really wanted to beef up and really flesh out.”
Lerch, who began teaching in New York City where she created one of the first e-NABLE chapters in 2013, introduced the concept to Sage Hill School. What first started with just one 3D printer has led to eight printers, with more than 50 children and adult recipients that have received prosthetics at no charge.
For only meeting three times a week for 20 minutes, students can develop skills in collaboration, geometry and creativity – no matter their education background.
“It’s such a playing-field equalizer,” Lerch said. “I’ll have students sign up for the class who are experts in engineering, robotics or math and they have all this background and other students who (had) Pre-Calculus as their most advanced math class. But all of them are coming from a place where they don’t have a ton of experience with this stuff. People really surprised themselves – it gives different students a chance to shine in the math-science fields, where they previously might not have thought that they could.”
The prosthetic recipients have come from as far away a Pakistan and Romania, but a majority of the clients live right here in Orange County.
A memorable moment for students and Lerch was in January, when 10-year-old Blake McGraw got his first 3D-Printed arm through Sage Prosthetics. Lerch told the Newport Beach Independent that the realization of this class affecting real people allows students to recognize their work is making a difference.
“This is somebody who is waiting on a device that they’re very excited about,” Lerch said. “So the consequences are a lot heavier than just you might not get the grade you want. It’s actually a person’s emotions and their life. So I hope that (students) remember that.”
Despite her love of teaching mathematics, Lerch said that working with students on a hands-on project gives them the skills to continue this work in college and even in their careers.
“When I would teach algebra two, it would be really rare that you get a student who’s like, ‘This is what I want to do for the rest of my life,’” Lerch said. “Most of the time, you’re fielding questions, like, ‘When am I ever going to use this?’ So these are things that are very tangible to them when the skills are useful, and what they can do with them.”
Chao said that she has also gained an immense sense of empathy with just one semester of the class under her belt. The ability to speak one-on-one with recipients, learn their measurements and color preferences all to create a final product that alters their lifestyle has led to unforgettable memories for both parties involved.
“Some of the recipients have gone through bad situations that caused them to not have their hands or arm and I think that this class (helps you) understand that maybe they’re not the most excited to receive the prosthetic even though they want it,” Chao said. “It can be a little bit hard for them to understand. So I think just having that sense of empathy is so important for this class.”
As for the future of the course, Lerch encourages any student to take part in the Service Learning Project and hopes to offer an advanced version of the class as well. But until then, Chao said she hopes all those a part of the class and at Sage Hill recognize the impact their work brings to the world – one hand at a time.
“I think it’s such a great opportunity to get a different experience and just help people in the community that need it most,” Chao said.

Vegetable oils are kitchen staples. The neutral-flavored, high-heat oils are used for cooking various foods, work for all cooking methods, and are affordable. That said, the increasing awareness of their potential health hazards and environmental impact and the discovery that vegetable oils aren’t as healthy as people initially believed have prompted a search for vegetable oil substitutes.
Vegetable oils are high in omega-6 fatty acids and are often processed using harsh chemicals. This article will explore seven of the best vegetable oil substitutes. Keep in mind that using better-quality oils means you may have to have a few in your kitchen for different cooking methods. Some are ideal for high and low heat methods, while others are not. But before we get to the seven best vegetable oil substitutes, let’s go over what they are and how they’re made to understand why they aren’t the best.
Vegetable oils are edible oils extracted from plants. The name is misleading because the oils are extracted from seeds and grains rather than vegetables. “Vegetable” oils include:
Soybean oil tends to be the most popular vegetable oil. It is often the sole ingredient listed on cooking oil bottles labeled “Vegetable Oil” in grocery stores. This particular vegetable oil is made by extracting the oil from whole soybeans. Oil extraction is done using a chemical solvent or putting soybeans through an oil mill where the beans are crushed and pressed. The cooking oil is mass-produced, which is why it is so affordable. Fortunately, chemical solvent or not, the oil is often purified and refined post-extraction.
Vegetable oils contain polyunsaturated and monounsaturated fatty acids, which fall into the good fat category. They are particularly high in omega-6 fatty acids, which have many health benefits, including reducing LDL cholesterol levels, improving the body’s sensitivity to insulin, and supporting heart health. The fatty acids are essential to a healthy diet because the body can’t produce them. However, the average Western diet already contains high amounts of these fatty acids, and too much of a good thing isn’t always good due to the risk of increased inflammation. There MAY be a connection between the increased consumption of these oils and the increase in chronic inflammatory diseases.
The environmental factors are also not in vegetable oil’s favor. Vegetable oils drive deforestation, land use, water consumption, and biodiversity loss. Moreover, they destroy existing and future food supplies, yet they provide less than 0.01% of our vital micronutrients. Those numbers don’t make producing these oils worth it, especially since there are less impactful substitutions.
Now let’s talk vegetable oil substitutes because there are many good ones to choose from! People mainly choose vegetable oil because of its high smoke point and neutral flavor, but others are better quality, better for you, and better for the environment. Whether you’re searching for another oil for frying, everyday sautéing, want to add moisture to baked goods, or simply promote browning, there’s something on the list for you. The switch may change the way you cook.
Avocado oil is one of the best vegetable oil substitutes. Not only is it nutritionally sound thanks to its high content of monounsaturated fats, polyunsaturated fats, and antioxidants, but its mildly grassy, nutty flavor adds a subtle touch of richness to any dish. Avocado oil has a high smoke point, making it suitable for high-heat cooking methods such as frying and grilling. It works well in various applications, and although the oil isn’t neutrally flavored, the flavor isn’t overwhelming. When shopping for avocado oil, be mindful of color. Authentic avocado oil is unrefined and has a dark green hue. Anything with little to no color isn’t worth buying because it has either been processed or cut with cheaper oil.
Ghee is clarified butter, meaning the milk solids have been removed. To make ghee, butter is placed over low heat until the water evaporates, leaving behind the milk solids. Although not the healthiest on this list (it is butterfat), this vegetable oil alternative contains vitamins A and K2. It is also one of the more delicious vegetable oil substitutes, and there is certainly room for it in a balanced diet. As expected, the flavor is buttery, rich, and toasty.
Ghee is an excellent alternative to vegetable oil for high-heat cooking methods such as frying and sautéing. In fact, its smoke point is higher than that of vegetable oil. Since all the water is removed, ghee is also shelf stable. Most importantly, it’s versatile. It works with sweet and savory foods alike. The thing is, ghee is a little pricey (note that if convenience is your priority, store-bought ghee is well worth the investment). Fortunately, you can make it at home. To make ghee:
Olive oil has been used in Mediterranean cooking for centuries. The extraction method is pretty simple. It entails grinding olives to release their oils. Olive oil is high in monounsaturated fats, which benefit heart health. Moreover, it’s loaded with powerful antioxidants and has anti-inflammatory properties. Depending on the olive oil selected, flavor and aroma vary but range from delicate to complex. Herby, fruity oils work well in salad dressings and sweets, while olive oil on the bitter, peppery side is excellent for savory foods.
Olive oil has a low smoke point, so it is best used as a finishing oil or for low-heat cooking methods. On the other hand, extra-virgin olive oil has a higher smoke point, making it suitable for almost all cooking methods, including shallow frying. Since it is unrefined and the fats aren’t broken down, the oil can withstand higher temperatures.
Almond oil isn’t just for skin and hair applications. It is one of the seven best vegetable oil substitutes because of its versatility and nutritional value. First, the oil has a high smoke point, making it suitable for all cooking methods, including stir-frying and grilling! Second, the oil has a mild nutty flavor and is relatively neutral in most applications.
Almond oil is a healthy alternative to vegetable oil. The oil is rich in monounsaturated and polyunsaturated fats and is a good source of vitamin E. Just remember that there are two types of almond oil. Refined almond oil has a high smoke point, which is ideal for cooking, whereas unrefined almond oil should be used solely as a finishing oil.
Coconut oil is made by pressing fresh coconut meat or dried coconut meat (copra). The oil has gained popularity recently due to its numerous health benefits. It is rich in medium-chain fatty acids that are quickly metabolized by the body. Furthermore, medium-chain fatty acids boost immunity and aid in digestion. It is also resistant to high heat, making it a great option for frying and sautéing.
Coconut oil is excellent in baked goods as well. Substitute vegetable oil with melted coconut oil to add moisture to baked goods like cakes and cookies, or use it in solid form. Unlike vegetable oil, coconut oil solidifies at room temperature and is a great addition to items like flaky pie crusts and biscuits, much like butter. Unrefined, pure virgin coconut oil has a mild, nutty flavor that adds a touch of tropical flair to food. If you’d like a neutral oil, use refined coconut oil because it is flavorless.
Unlike vegetable oil, flaxseed oil is anti-inflammatory and an excellent source of omega-3 fatty acids. Those looking to increase their intake of omega-3 fatty acids and rebalance the omega-3 to omega-6 ratio will benefit from this vegetable oil substitute.
Flaxseed oil has a very low smoke point, so it should not be used for cooking, but if you use vegetable oil in homemade mayonnaise, dressings, and sauces, swap it for flaxseed oil. The oil has a nutty taste with bitter notes that work well with various foods.
Although we don’t hear much about it, walnut oil is a healthy, sustainable alternative to vegetable oil. As the name suggests, walnut oil is extracted from walnuts. The oil is rich in many of the nutrients that walnuts contain, including omega-3s. It makes a good substitute in no-heat applications like sauces and dressings and can also be used to sauté vegetables over gentle heat.
Overall, finding a suitable vegetable oil substitute is easy and is even easier when you know what’s available. Each substitute on the list has its own unique flavor and uses, so it’s essential to choose the one that works best for the food you’re making. Some of the best vegetable oil substitutes include coconut oil, avocado oil, olive oil, almond oil, and ghee. With some experimentation and creativity, it’s possible to find the perfect vegetable oil substitute while you bring something new and exciting to your kitchen.
